Easter Rocky Road with 90% Dark Chocolate
INGREDIENTS:
100g 90% dark chocolate
1tbsp of dried blueberries
1 tbsp of dried cranberries
2 tbsp of chopped walnuts
2 tbsp of chopped marshmallows
1 tbsp of unsalted butter
UTENSILS:
1 pot of hot water.
1 stainless steel mixing bowl.
1 plastic spatula.
1 thermometer (or you can use your bottom lip to test the temperature - explained below). Two squares of baking paper 20cm x 20cm.
METHOD:
Place chocolate and butter in the stainless steel bowl.
Fill saucepan with 1/3 of water and bring to a simmer.
Once water is at a simmer, place the stainless steel bowl on top (bowl must not be touching the water).
Stir the chocolate and butter mixture with spatula until melted.
Test the mixture with your thermometer, mixture needs to be at 27 degrees. If you do not have a thermometer, test the mixture on your bottom lip. If it's warm this is the right temperature. If it's too hot, you need to remove from the heat and keep stirring until cooled to a warm temperature. Fold through remaining ingredients. Lay 1st sheet of baking paper into your dish then pour mixture on top. Place the second piece of baking paper on top of mixture and press firmly to level out the mixture evenly across the dish. Cool down in the refrigerator for at least one hour. Once cooled, cut into portions or eat the whole thing on your own and get yourself into a chocolate coma!
